I think the Irish name Darby (or in Irish Deairbe) is a nickname for Diarmuid.
It is in this particular case anyhow -

MacLysaght says that the forname Diarmaid is anglicized as Darby as well as Dermot and thus MacDarby is Mac Diarmada.
