Sorry, I didn't feel my Irish would be up to making it sound natural. Someone like Bridmhór or braoin would be much better at it. But since no one has taken on the task, I'll give it a shot, and just maybe it will be so bad as to spark someone else into action...

A Jenny, a chara.
dear jenny

Bhain mé an-taitneamh as a bheith ag caint leat 'chuile lá. Tá áthas agus onóir orm aithne a fháil ort, fiú mura raibh sé ach ar feadh tamaill bhig...
talking to you every day had been a thing that put a big smile on my face. i'm happy and honored to have known you even if only for a short time..

Níor bhuail mé ariamh i mo shaol eachtraí mar do chuid ionracas agus an mhuinín a thug tú ionam agus chuir tú orm mé féin a mheasú aríst mar dhuine. Mar sin, chuir sé brón orm nuair a dhúirt tú liom go mbeifeá ag imeacht leat go ceann bliana, ach ag an am céanna tá áthas orm dhuit, mar gheall ar go mbeidh tú ag baint taitneamh do shaoil as.

your honesty and trust in me was something i've never experienced in my life and made me feel good about my self again . so it saddened me when
you told me that you were going away for a year. but in the same time i am happy for you. because you are going to have the best time of your life.

Mar sin, tá súil agam go n-éirí an t-ádh den domhan leat agus le do chairde.
so i wish all the good luck in the world for you and your friends.

Nuair a thiocfaidh tú ar ais, beidh mé anseo i gcónaí ag fanacht lenár gcomhrá laethúil.
when you come back i will still be here waiting for our daily chat

Ádh mór ort, Jenny, a stór. Tabhair aire dhuit féin. Aireoidh mé uaim go mór thú, a chara.
good luck princess jenny. and take care of your self. going to miss you alot my friend :')

Coinneoidh mé ag guí Dia thú a thabhairt slán.
i will always keep you in my prayers

Is fearr Gaeilge bhriste ná Béarla cliste, cinnte, ach i bhfad níos fearr aríst Gaeilge bhinn bheo na nGaeltachtaí.

Now that you have your translation, I think you should set it aside and send her your original letter in English. I am sure she would be more impressed with your own words straight from your heart than something wrapped in code and hidden behind a mask. Maybe keep a phrase or two near the end at most...
