i don't know if this is actually what i want it to say
it should say "i once loved you"

You could also put it:

Bhí grá agam duit tráth.
...I loved you once...
or
Bhí mé i ngrá leat tráth.
...I was in love with you once...

...the 'tráth' meaning 'one time ago' or 'a while'

'uair amháin' literally means 'just one time' as in something or an event happening once only and not over an extended period of time...
