AON INTINN, AON CROÍ, AON GRÁ
Is this the correct translation for the phase....ONE MIND, ONE HEART, ONE LOVE?

intinn amháin, croí amháin, grá amháin or aon intinn amháin, aon chroí amháin, aon ghrá amháin
The number aon lenites certain consonants
I'm still a learner, so be sure to get input from others, especially for tattoos.

Just to add, if you leave off the "amháin," what you have is "any mind, any heart, any love."
You CAN however leave off the "aon" to save space. All it does here is emphasize the word "one."
If you choose to do that, you'll want to leave off the "h's" in "croí" and "grá." As Kevin said, it's the word "aon" that puts them there, so if you leave off "aon," you'll want to leave off those "h's" as well.
