My go at it would be Coimeádaí de Nádúir
Tá mé ag foghlaim i gcónaí. With translations, it is best to wait for someone more adept than I to confirm.

Solid attempt there Deb,
Changing it around a bit..
Caomhnóir nádúir = Guardian of Nature

The 'Of' part can be dropped with the second word in the Genitive
(Perhaps this type of construction will be explained in better detail by one of the Gaeilgeoirí)

I think the following would be better.

“Caomhnóir an Nádúir”

Pronounced; “Qwave-nore un naw-doo-ir”

“Nature” as a general concept is translated by “an nádúr”

For example

The laws of nature = Dlithe an nádúir.
