Hi Lou,
First off, as far as we Irish are concerned, 'luck of the Irish' is never an appropriate phrase - it makes us cringe.
Anyway, you could say:
Go n-éirí go geal leat
May you succeed wonderfully

I always found the phrase to be quite helpful when im cheating at bourée a kind of Louisiana Bayou Poker. "Why do you keep winning everythign adn losing nothing" oh Luck of the Irish.
