Erin is a poetic name for Ireland. It is also the pronunciation for Éireann, which is a form of Ireland in Irish. In my opinion, it would work if you were to say "...a touch of Erin to Florida...", but my opinion doesn't not make it right, so...
Well, I hope I helped a little. Slán,

It looks fantastic Dutty!
12,000 sq. ft of craic, I like that. You could fit the whole of Riverdance in there. You can use Erin and Ireland interchangably, nobody minds. Say, "a little bit of Éireann over here". Try and use some well known Gaelic phrases like: "Céad Míle Fáilte" - 100,000 welcomes Look at the phrases section on this site for ideas for greetings. There's lots of Irish themed merchandise available to buy online. See here for a personalised mirror: http://www.etched-glass.com/irishpubmirror.html I'm not connected with them BTW. Anyway, go n-eirí go geal leat! (may you suceed brilliantly) Slán, Ailill. "Tá an saol mór lán den fhilíocht ag an té dar dual a thuigbheáil agus ní thráfaidh an tobar go deo na ndeor."

I love those cozy booths, Dutty.
I've been dodging an invitation to go to North Port, but perhaps I'll have to go now, just so I can pop over to Ft. Meyers after you open! Best of luck to you! Tá mé ag foghlaim i gcónaí. With translations, it is best to wait for someone more adept than I to confirm.
