Laethanta Saoire Sona = Happy Holidays

If you are using the expression to wish someone "Happy Holidays!" (the way you'd use "Happy Birthday!" or "Merry Christmas!") then:
Laethanta Saoire Sona Duit (if you're talking to one person)
Laethanta Saoire Sona Daoibh (if you're talking to more thatn one person)

Or, if what you really want is "Merry Christmas":

Nollaig Shona Dhuit (to one person) or Nollaig Shona Dhaoibh (to more than one person).

"Happy New Year":

Athbhliain Shona Dhuit/Dhaoibh
