I think it is a good idea that if you are not totally sure of a transaltion- that you should make that clear.

you could add 'a Mhorgan' either at the start or the end (the end might be better) but there is no other capitalisation necessary.

Giollacht is better because its a particular kind of service i.e religious devotion see Giolla Íosa etc.

ag do ghiollacht works for me because the implication is BOTH 'at your service' and 'serving you'.
