I'd be very very careful with any sites or such saying that celtic knots mean anything specific like that...they were mostly ornamental!
What you could use is the trinity knot, which looks like a heart and is made of one unending ribbon I'll post a link here soon to it, if you don't already know the one I'm talking about Is é Christian Stoehr mo chroí

There really aren't "special Celtic symbols" for anything. It's a common misconception that there are "Celtic" or "Irish" symbols or signs for certain concepts, but it just isn't so.
